Pro- and prebiotics for human and animal use

Probiotics are beneficial microorganisms that are beneficial to the host. There are a number of challenges concerning the application of probiotic cultures in animals and humans. The main challenge is stability of the probiotic cultures in products during storage as well as during transit in the gastrointestinal tract. There is also a limitation of accessibility of probiotics to the majority of poor rural consumers. The research focus on the following: Improvement of stability of probiotics through their encapsulation. The effect of probiotics on growth of pathogenic microbes in food. The antimicrobial effects of herbs on viability of probiotic cultures. Optimization of biomass production for probiotic culture for feedlot application. Incorporation of prebiotics in foods frequently consume by rural communities whose comsumption of probiotic dairy products is limited.
