Anti-oxidant activity and the effect of antioxidants on cellular function is a focus area of research. Applications are in the fields of wound healing (e.g. wound dressings) and food sciences (e.g. tea, honey and sorghum) and research involves the development of cell based methodologies that mimic physiological processes such as collagen synthesis in wound healing and gastrointestinal digestion. Another focus area is the use of the obesity/metabolic syndrome rat model to study the effect of weight reducing drugs. This includes drug efficiency as well as the identification of possible toxic side effects. This model will further be developed to study the effects of functional foods e.g. antioxidants on associated symptoms such as increased blood pressure and lipid profiles.
